Making homemade potato salad and homemade lemonade involves a bit of time and effort, but the result sure is tasty. If you pay attention to the prices you might just get frugal potato salad and lemonade as well.
We only buy potato salad when it is on BOGO sale at Publix for about $3-4 for two small salads, and the lemonade is regularly $2.99 at Publix.
I bought 3 lemons for $1 at Sedanos (last week I found 4 for $1 at a local market), and I found 5 lb of beautiful new potatoes (the Green Giant brand) at Save A Lot for $2. All the other ingredients I had on hand. I got two big batches of potato salad and 1 1/2 gallon of lemonade.
3-4 Lemons, washed
Sugar to taste
Slice the lemons and squeeze the juice into a jug, add a gallon of water and sugar to taste. Shake it/stir it up and cool.
Pour over a glass with ice cubes, and enjoy!
5 lb new potatoes
1 cup sugar
1 tbsp flour
1 tsp salt
1/2 – 1 tsp ground mustard
1/4 tsp pepper
3/4 cup white vinegar
1/4 cup water
2 cups of sour cream
Boil potatoes until tender, drain and cool
While the potatoes are boiling, add the following in a small pot: sugar, flour, salt, mustard powder, pepper, vinegar and water. Bring to boil over medium heat and constant stirring, boil and stir for 2 minutes.
In a small bowl whisk eggs slightly with a fork.
After the vinegar mixture has boiled for 2 minutes add a small amount to the eggs and stir, then pour the entire egg mixture into the small pot. Whisk for 1 – 2 minutes or until the mixture is thick. Cool down and add sour cream.
Once everything is cooled cut potatoes into small bitesize pieces and turn in the mixture carefull. Cut chives and add to the potatoes.
Total cost for homemade potato salad and lemonade $3, and there is plenty for the entire family.
