My boys were in the mood for some frugal baking today, and since it is our last relaxing week I figured we might as well bake some back-to-school cakes.
The boys could not decide on what cake to make, so we ended up making two cakes. My seven-year-old son wanted to make carrot cake, and my four-year-old son wanted to make chocolate cake. I had the basic ingredients, and I managed to get cheap flour and sugar at Target two weeks ago, so we went all out. I did a search on All Recipes with the ingredients we had and easy cakes, and the results were great.
The only changes I made was to use 1/2 the butter in the chocolate cake and 3/4of the sugar, but I added some more fat free sour cream instead.
For the carrot cake, I only used half the oil, and used less sugar, and I substituted the oil with two tablespoons of sour cream.
ABC Chocolate Triangles:
The boys got very creative with their decorations, and they wanted chocolate icing on all cakes. This was the only thing we did not make ourselves, but it is just so easy with storebought icing.
After we were done we made two plates with cake for our neighbors, which my boys hand-delivered. We also made a plate for one of the people my husband works with, as he always ask my husband if I have baked anything new. Apparently home-baked goods are rare around here, so everyone loves it when we share.
