The Frugal Recipe of today is extremely simple, easy to do and tastes great. It is grilled aubergine. Aubergine was on sale at Publix last week for $0.99/lb, and I could not resist.

I have done aubergine in many different ways, but we have been grilling quite a bit lately, so I decided to try and grill the aubergine.

I sliced the aubergine, turned it in a mix of extra virgin olive oil, balsamic vinegar, salt and pepper. Then I put them on the grill, and I added a bit of fresh mozzarella (another cheap Publix find).

The result….delicious grilled aubergine with fresh mozzarella. It will definitely not be my last time grilling aubergine this way.
