The boys and I had to stay home today, while the last boxes arrived with UPS, Fed Ex and USPS. They were making some very interesting Christmas decorations, and I decided to make Danish aebleskiver, which is a favorite among my boys.
My sons helped make the aebleskiver, and they could not wait until I was done cooking, so my youngest son was full by the time we actually sat down at the table.
The recipe:
Danish Aebleskiver
2 cups buttermilk
7 eggs
2 cups flour
1 tsp baking soda
2 tblsp sugar
1/2 tsp. salt
2 tbsp. of melted butter for frying.
Serve with powdered sugar, sugar, and jam
Directions:
- Divide the egg whites from the egg yolk.
- In a large bowl mix the egg yolk with the buttermilk, flour, baking soda, sugar and salt. Mix until well-blended and refrigerate for 1/2 hour.
- While the mixture is resting in the fridge, whisk the egg whites until stiffened.
- When the egg whites are stiffened, carefully stir them into the dough with a dough scraper.

Melt 2 tablespoons of butter in a small pot, add a drop to each room in the ableskive pan. Fill up the aebleskive pan with dough, and wait until the bottom is brown. When it is brown, tip the aebleskiver over with a wooden stick or knitting stick. Cook over medium heat.

Serve with powdered sugar, sugar and jam of your choice. At my house we prefer strawberry jam with our aebleskiver.
