I have always loved this simple carrot salad, which I always used to help my mother make when I was a young girl. With a couple of healthy ingredients, this carrot salad turns into quite a tasty and colorful addition to any dinner table.



Peel and shred one lb of carrots
Add a handful of raisins
Peel and cut up two sweet oranges into small pieces
Use any leftover juice from the orange and add to the salad.
By using ingredients from Aldi (check out these Aldi prices), this simple carrot salad turns into a very frugal salad.
