Good Luck CakeThanks to the great price on carrots at ALDI ($0.69/2 lbs), my family has been eating a lot of carrots lately. This weekend we have been doing a lot of FCAT preparation, so to reward the boys I made them a Good Luck Carrot Cake for dessert. I used this carrot cake recipe from Allrecipes as a base, but I made some adjustments to it.

I always try to substitute some of the oil with orange juice, and another change that I make to almost all recipes these days is substituting half of the all purpose flour with whole wheat flour. I also recently found extremely cheap chocolate chips at ALDI, so I added half a cup of chocolate chips, which created a chocolate bottom on the carrot cake.

Carrot Cake Ingredients:

  • 4 eggs
  • 3/4 cups vegetable oil
  • 1/2 cup of orange juice
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 cups grated carrots
  • 1/2 cup chocolate chips

 

Homemade Icing

  • 1 – 2 Tablespoon Butter
  • 2 1/2 Cups of Powdered Sugar
  • 1 tsp Vanilla
  • 1 tsp Water

 

Carrot Cake

Carrot Cake Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch pan.
  2. In a large bowl, beat together eggs, oil, orange juice, white and brown sugar and 2 teaspoons vanilla.
  3. Mix in flour, whole wheat flour, baking soda, baking powder and salt.
  4. Stir in carrots.
  5. Fold in chocolate chips.
  6. Pour into prepared pan.
  7. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  9. Mix all the icing ingredients, add more powdered sugar until you get your desired consistency.

 

Carrot Cake

Everyone loved this homemade carrot cake, and the boys were thrilled about the homemade icing too. My oldest son has been studying harder than I ever studied for any high school exam, so this was definitely a hard-earned cake.
