My boys wanted to make a 4th of July cake, and as always I was up for the challenge. For our 4th of July cake, I used our favorite carrot cake recipe, because I had lots of carrots in the produce drawer. My boys love this carrot cake, and I love the fact that I can get my carrot-hating son eat carrots…even if it is in the shape of a cake. Sometimes I add chocolate chips, but this time around I decided to leave out the chocolate chips, since they will melt, when we bring the 4th of July cake along for our 4th of July celebration.

I made two versions a regular 4th of July Cake and a Carrot Cake with Bourbon Vanilla from Nielsen Massey. We decorated the 4th of July cakes with sprinkles from ALDI, and the boys had a great time with it.
