Since our family never eats breakfast together during the week, we try to put more focus on breakfast during the weekend. The Target Breakfast Twist is all about making breakfast fun and less hectic, and the Frugality Is Free family has embraced this project with open arms.

Granola Banana Split

On weekdays, my Mom-on-the-go breakfast is usually a banana right before an exercise class and a glass of water, but on the weekend I spruce it up a little bit. One of my goals has been trying to find ways to add protein to my breakfast, but I will admit that I am not fond of eggs in the morning, and as a vegetarian all meat-choices are off the table as well.

How We Make It:

  • A banana
  • Your favorite fruits
  • Nature Valley Protein Crunchy Granola
  • Jif Creamy Peanut Butter


Simply spread a line of peanut butter on the banana, then drizzle it with granola and cut up fruits. You can also add a dollop of plain yogurt, if you want a little more creaminess.


The boys’ favorite breakfast is by far crepes, although pancakes are a close second. The Target Busy Family Project inspired us to kick it up a notch though, and the boys surely enjoyed the new chocolaty twist to their favorite weekend breakfast.

How We Make It:

  • 2 cups of milk (we use lactose free milk)
  • 2 cups of flour
  • 3-4 eggs
  • a dash of salt
  • 1 tea spoon of sugar
  • 1 tea spoon extra virgin olive oil
  • butter for cooking
  • 1/2 teaspoon vanilla is optional

Mix the ingredients until there are no lumps left, then pour it on the pan, and make sure the batter is spread thin. Turn when one side is brown, and serve warm. Spread Nutella over and add bananas or other favorite fruits.

We were out of whole wheat flour, but using half whole wheat flour and half regular flour usually make great crepes as well.
